Just A Few Things...



I have pretty much been non-stop blogging since last night until now. Deals, coupons, and more have been flying all over the place. So just in case you missed it, I wanted to bring your attention to a couple of important things:
  • I made an announcement about coupon classes. Be sure to read the post and e-mail me if you're interested. If you don't e-mail me, I'll assume nobody is interested. I need to get an idea of what kind of interest there is to know whether or not to pursue it.
  • Lastly, the new poll in the top right corner of this page is still active for another 4 days. Please please please vote to tell me your thoughts. I need to know what features you most enjoy, what you come to this blog for, and what you want to see more of. Feel free to leave a comment on this post or on the previous poll post to let me know your thoughts. I'm in the process of switching over to a new site, and this is the perfect time for you to speak up on any changes you would like to see! This blog is for my readers, so I have to know what my readers like seeing and why they come here! Thank you to those of you who have already taken it!
  • I don't know if you heard the devastating news about Chile, but we should definitely keep the people there in our prayers. This is the worst earthquake in a century. My heart goes out to all of them...

I'm Into It...



I discovered this pretty cool linky party that Hope Studios is doing called "You're Into It." One thing that the results from the poll is showing me is that you like personal stories of mine. I figured this would be a fun way for you to personally get to know me a little better. Here it goes!

These are some of the things that I'm majorly into as of late:

My Poverty and Justice Bible that I got as a Christmas gift from my husband. It's the only thing I wanted for Christmas. I love it! Since social justice is one of my biggest passions, I'm really enjoying being able to read my Bible every day and see all of the verses highlighted about social justice. God definitely had a lot to say about social justice. Jesus was a social activist, loving every single person everywhere He went. Did you know that there are over 2,000 verses on social justice? If you're interested in buying it, go HERE. (Cheapest I've found it on the web!)


One of the main ways I am Getting Thin in 2010 is by doing Zumba 3-4 times a week. It is the best workout, and the greatest thing is that you do not feel like you're working out at all! It's an hour-long class, and you can burn up to 1000 calories in just one class. This is how I lost weight for our wedding, and now I am returning to it once again. It makes our budget very tight, but it's worth it to me. I know that it's a workout I will actually stick with because I enjoy it so much!


Bethany Dillon is one of my favorite music artists out there. She's always inspired me. She has one of the biggest hearts for God I've ever seen, she writes and plays her own music, her voice is gorgeous, and her lyrics are incredible. She's so real. Do yourself a favor...go download "Hallelujah" by Bethany Dillon (acoustic version is best). The song is amazing. It's hard to pick just one song that I love, but this song has always helped me praise God, even in the darkest of times.



I would do a commercial for Back To Nature. I am obsessed with their Chocolate Delight granola. When it goes on sale at Publix, I grab about 6 bags of it! Next time it's on sale, give it a try. SO yummy! I also love this company because they are organic, rain forest certified, and fair trade certified.


I have always loved dangly earrings. You almost never see me without some type of dangly earrings on. Lately, though, I have a love for wooden dangly earrings, like these! They are so light-weight and you can barely even tell they're hanging from your ears! And the designs and colors are so bold and awesome!

Oh man...I'm really putting myself out there on this next one. But isn't blogging all about being real with your readers and being yourself? Don't think I'm weird...


Yep, I'm a "trekkie." Bet you would have NEVER guessed that one, huh!? It really does actually fit me, considering I love Star Wars, Lord of the Rings, King Arthur, etc. I always thought Star Trek was stupid and very "nerdy." About a year and a half ago, though, my husband and I decided to give it a try. They have all of the Star Trek series and seasons at our local library. We already went through all 3 seasons of The Original Series. Now we are on season 3 of The Next Generation, and it is amazing. I like it way better than the Original Series. So, no, we never watch TV...but almost every night my husband and I sit down to watch a Star Trek episode with a bowl of popcorn. Please don't judge us...He He.



Since we went Vegetarian over 6 months ago, I have fallen in love with Indian Cooking. My friend Blake introduced me to it, and I thought it was quite strange at first. I now love it more than almost any other type of cuisine. It is so delicious, full of flavor, low-fat, healthy, and colorful! Curries are so much fun to make...and SO easy!

Hope it was fun learning a little bit more about me...and knowing that I enjoy more in life than just coupons, Publix, and Swag Bucks! Ha ha!

Coupon Classes???



I'm just throwing this out there to see how much interest there would be...

Would anybody be interested in coupon classes? We would probably meet in a public place of some sort (like a church, coffee shop, or the library) or somebody's house (if someone was willing to host). It would cover the basics of couponing, Publix, CVS, Walgreens, etc.

I've been thinking about doing this for some time, but I wanted to see who would be interested. I would do them for free (As long as somebody brings some yummy snacks. He He).

Introducing...Veggie Delights -- Yummy Mac n Cheese!



I am really excited to introduce to you a new weekly feature on this blog...Veggie Delights!

So as many of you know, my husband and I are Vegetarians. Most of the time when we tell people this, we get responses such as...

"Oh, I could never go without meat."
"Gross. I hate vegetables."
"How do you make yummy meals without meat?"
"Cooking must be so difficult. There's nothing to work with."
etc. etc. etc.

Because this is something I am very passionate about, and since I love to cook, I thought it would be fun to highlight a Vegetarian recipe every week! I'm calling it Veggie Delights because I'm convinced that I can share with you some really amazing meatless dishes that you will love, even if you're not a Vegetarian! Every week I will highlight one of my favorite Vegetarian recipes.

This week's fantastic recipe: Yummy Mac n Cheese (pictured above)!

I made this Mac n Cheese with my friend Blake while she was here visiting back in January. We got it from an edition of Family Circle magazine. It is honestly the best mac n cheese I've ever tasted. We were both really impressed by the recipe.

The only problem is that it isn't a very budget-friendly meal, simply because of the type of cheese it calls for. It calls for Gruyere cheese (which is like over $10 a block). When my friend and I made it, we substituted Havarti cheese (a little cheaper) and it was amazing. When I made it by myself the second time on my Freezer Cooking weekend, I substituted Mozzarella (even cheaper) and it worked great! (It wasn't quite as creamy and delicious, but it was still amazing).

What You'll Need:
  • 1 box penne rigate pasta (I used whole-wheat...tastes so good!)
  • 3/4 pound shredded sharp cheddar cheese
  • 1/2 pound Gruyere cheese, shredded (or Havarti or Mozzarella)
  • 1/2 cup shredded Asiago or parmesan cheese (I've used Parmesan both times)
  • 3 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 2 cups milk (I used skim milk)
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/8 tsp cayenne pepper

Directions:

1. Heat oven to 350 degrees. Coat a 2-quart broiler safe baking dish with nonstick cooking spray. (Mine is only in aluminum foil, because I was going to freeze it for later). Bring a large pot of slightly salty water to boiling.

2. Once water boils, add pasta. Cook about 6 minutes, drain.

3. In a large bowl, toss together all cheeses. Set aside.

4. Meanwhile, melt butter in medium-sized saucepan over medium heat. Whisk in flour until smooth and slightly bubbly. In a thin stream, whisk in milk. Stir in onion powder, salt, and cayenne. Bring to a boil over medium-high heat. Reduce heat and simmer 3 minutes. Remove from heat. Whisk in 2 1/2 cups of the cheese mixture.

5. In pasta pot, stir together cooked pasta and the cheese sauce.

6. Pour half of the pasta/cheese sauce mixture into prepared baking dish. Sprinkle with generous cup of the shredded cheese mixture. Spoon remaining pasta/cheese sauce mixture into dish and top with remaining shredded cheese.

7. Bake at 350 degrees for 20 minutes. Increase oven temp to broil and cook 3 minutes, until top is slightly browned. Cool slightly before serving.

Enjoy! It makes 12 side dish servings. (But of course I always eat way more than that). Oh, and just so you know...I've stayed away from this recipe due to my efforts to Get Thin in 2010 (update coming tomorrow)! Ha Ha!

Super Savings Saturday -- Under Budget For February!



Well, if you read my post about learning how to say no to a deal, you know that I did it -- I stayed under budget for the month of February! Yay!

Here's what I bought at Publix this week (pictured above):

2 packages Wise Cheese Doodles

I also made a run up to Walgreens today to grab that Right Guard deodorant. I paid a total of $2.34 for 4 deodorants, and had $9.98 in savings.

All in all, with both Publix and Walgreens combined, I spent $16 on groceries this week. Okay, so I'm $.31 over our monthly budget. I think I can deal with that...

Right Guard Only $.10 At Walgreens!



**Update on this: I just went up to my Walgreens really quick to try this deal out. They were not on clearance at my store, but I still did the deal to get $.50 deodorant. =)

There is a great deal on Right Guard at some Walgreens stores right now. Select Right Guard deodorants are on clearance for $2.19, and they are on sale buy one get one free this week and next. Use this $2/2 printable coupon to pay only $.10 each! Wow!

Even though the sale lasts through next week, I would go ahead and print the coupon now. The coupons re-set on Monday, and it might disappear. Just a heads up!

Remember, though, that clearance deals do vary from store to store!

Even More Blockbuster Express Codes = Free Movie Rentals!


Are you planning a movie night this weekend? I know we probably are, because it's cold for us here in Florida.

If you decide to rent a movie, be sure to use one of the following codes at a Blockbuster Express Kiosk to get a FREE movie:

Reader's First Couponing Trip To Publix!



Jen e-mailed me this week with the results of her very first couponing trip to Publix! She's been wanting to try it for several months now and has been faithfully gathering her couponing inserts every Sunday. She finally decided to give it a go this week, and she had GREAT results! She did say that she picked up a few things she wasn't originally planning on buying since her husband was with her (And we all know how that affects the grocery budget. They can sure be impulse-buyers! He He).

Here were her final results (pictured above):

Total Before Sales and Coupons: $229.12
Total saved from sales: $89.39
Manufacturer coupons used: $22.90
Store/Competitor coupons used: $16
Total amount saved: $128.29
Total paid after all sales and coupons: $100.83

Rite Aid just released a new coupon for $3 off a $15 purchase. You can go HERE to print it. The cool thing is that if your Publix considers Rite Aid a local competitor, you can use this coupon on your groceries! Yay!

Too bad Rite Aid doesn't exist where I am. =( That means I can't use it at Publix. Bummer!

$10 Off Ponyo Blu-Ray DVD Combo Pack!



Ponyo
is coming out on DVD this Tuesday, March 2nd. As usual, there will probably be sales on the Blu-Ray DVD Combo Pack at many different stores. No worries -- this Combo Pack almost always includes a regular DVD that can be played on a normal DVD player (we don't have blu-ray, but always take advantage of the blu-ray sales for this very reason).

Disney has released a $10 coupon for Ponyo! So be sure to print that and use it on the sales next week, if you're wanting to grab this new DVD! Looks like Target will have it priced at $24.99, but we will might see prices lower elsewhere.

Swag Bucks Heads Up!


Just a really quick heads up before I'm off to work...

According to The Swag Guy, Swag Bucks is supposed to be giving out more codes today to continue the celebration from yesterday. It won't be as crazy as yesterday was, but there are bound to be some codes floating around!
